
Always over here trying to mix it up when we have friends over for dinner. This steak salad recipe is an easy one to pull together for groups of 4 all the way to a big group of say, 20 guests.

THE DETAILS
Dinner for 4-20 (I cooked for 10)
Guests arrived at 6:00pm
Night Before – Marinaded the steaks the night before
Morning of – Chopped toppings for 45 minutes + assembled platters
When Guests arrived – Cooked the steaks + set it all out when where were ready to eat

THE PLAN
- Day-before/ Morning of
- Wash lettuce if you aren’t buying pre-washed lettuce [dry well and wrap in clean kitchen towels if you are washing the night before]
- Pre-cook and chill other proteins
- Cut/shred cheese
- Marinate steak
- Make Salad Dressings [Or buy them. Just saying.]
- Day-Of
- Pre-cut vegetables
- Cook + chill steak [Don’t slice until time to serve. Can cook day night before, as well.]

DIETARY RESTRICTIONS
When you plate this, be sure to consider dietary restrictions. If you have a vegetarian in the group, be sure the meat is in it’s own container. Someone that is dairy free – make sure the cheese isn’t touching all the vegetables. You get the picture. It might require a couple of extra bowls, but it is worth it.
Dairy Free – They won’t eat the cheese. Don’t add any cheese/yogurt to the dressings.
Gluten Free – You should be good here
Egg-Free –If you use hard boiled eggs, put them in their own dish.
Vegetarian – Serve the meat in a separate dish, so it isn’t touching all other goodies. Add the roasted chickpeas so that there is a vegetarian protein option.
Vegan – Plate all vegan items on their own plate so that they don’t touch any of the meats or cheeses. Add the roasted chickpeas so that there is a vegetarian protein option.
