This is so simple, I can’t even believe I created a recipe for it. However, a recipe is the easiest way to share it with you so here we are.
This is ideal to make at the end of summer when tomato season is in full swing. Roasted tomatoes are basically the candy of summer. I went off-season for this one and made this in spring with those “less ripe” packs of tomatoes you find at the grocery store. Still pretty spectacular.
The star of this show is the roasted tomatoes, but the Everything but the Bagel Sesame Seasoning is also pretty spectacular. Am I the only person that loves an everything bagel, but doesn’t need to eat a bagel every day. Here we have the same flavor paired with protein and produce. All sorts of winning happening here.
This is a perfect recipe to make ahead. When I crafted this for brunch I put the yogurt in the bowl, topped with the everything bagel season and stored back in the fridge. I prepped the tomatoes on a baking sheet and set them aside to roast until the last minute. Top with the roasted tomatoes and another dash of the Everything but the Bagel Sesame seasoning right before and you are good to go.
I hope you love this easy brunch dish! It’s:
