Michael and I had some friends over last night for dinner. We had a meal that was more complicated than this exact one because I was home by myself and started playing with my pasta machine. I need to perfect that recipe a bit more before I post it. But I digress.
Our friends left, and I said: “We need to have more dinner nights with each of our friends individually.” Funny enough, he was thinking the same thing.
So, I think that is our new mission for the next couple months. I made a list today and that means 16 dinners to get on the calendar. That doesn’t include “family functions” where we all get together in one big group or meals with our actual families.
This is just us making it a priority to get some one-on-one time with each of our friends.
They are “come as you are” even if that is in your PJ’s cause you never got dressed on a Sunday. Maybe play a game. Maybe watch a movie. Maybe have another drink and ponder the deep, juicy life stuff.
What should I call these?

“Didn’t Clean for You” Meals
I can’t decide what to call them.
Any thoughts would be appreciated.
In the meantime, this is a meal I made for a different set of friends recently. It was a throw together meal using what we had and trying to make enough for some leftovers for lunches that week. I actually doubled this recipe to freeze the other half.
