A quick mexican slaw that is equal parts fresh, spicy, acidic and full of flavor. A fantastic side dish for your next taco night, taco bar, or simply for this week's meal prep.

- 3 cups cabbage finely sliced
- 1/2 cup cilantro roughly chopped
- 1/2 jalapeno finely chopped
- 3 tbsp lime juice
- 3 tbsp olive oil
- 1 tsp cumin
- 1/4 tsp salt
Add cabbage, cilantro and jalapeno to a bowl.
In a separate small bowl or jar with a lid combine lime juice, olive oil, cumin and salt. Mix or shake to combine.
Add dressing to vegetables. Mix to combine.
Serve immediately or store in an airtight container for up to 4 days.
