A quick mexican slaw that is equal parts fresh, spicy, acidic and full of flavor. A fantastic side dish for your next taco night, taco bar, or simply for this week's meal prep.

  • 3 cups cabbage finely sliced
  • 1/2 cup cilantro roughly chopped
  • 1/2 jalapeno finely chopped
  • 3 tbsp lime juice
  • 3 tbsp olive oil
  • 1 tsp cumin
  • 1/4 tsp salt

Instructions

  • Add cabbage, cilantro and jalapeno to a bowl.
  • In a separate small bowl or jar with a lid combine lime juice, olive oil, cumin and salt. Mix or shake to combine.
  • Add dressing to vegetables. Mix to combine.
  • Serve immediately or store in an airtight container for up to 4 days.
